Il Pesto Pure Sheep
From the union of two traditional Italian excellences, pecorino and pesto, comes this original cheese with a tantalizing taste. Among the pecorino cheeses of this family, this is undoubtedly the most vivacious and summery thanks to the fresh notes conferred by PDO Genoese Basil and Mediterranean pine nuts.
Shortly matured and small in size, it is characterised by the freshness of the pesto mixed directly in the boiler after the curd has been broken.
The paste is compact and elastic, characterised by a discontinuous and irregular distribution of basil that gives the product a bright green colour. An explosion of flavours and colours, beautiful for the eyes and good for the palate. As a dressing on a cold pasta, it enhances the flavour and decorates the dish.
