Pecorino al Vino Chianti DOCG
A cheese made from sheep’s milk with a medium-long maturation period. Its white, compact paste tends to take on chalky facets as the ripening process progresses. The brown rind is the result of treatment with olive oil grounds. Its distinctive trait is the further treatment of the surface with Chianti wine DOCG, for which the dairy has obtained authorisation from the Chianti Wine Consortium to use the protected designation on its label.
