Il Pepato Pure Sheep

This pecorino with its pungent and inebriating aroma is gently massaged with extra virgin olive oil and covered with a cascade of ground black pepper that gives it a strong, vaguely spicy flavour. The custom of covering the cheese with a thick layer of pepper, a sort of ‘shirt’, is typical of the Pisan area and was born with the aim of protecting the product during the maturing period. The edible rind contributes to the product’s flavour and makes it a tasty and appealing product suitable for a variety of recipes in the kitchen.
