Ingredients:
- 500 g Baccellone pure sheep
- 1 carrot
- 1 fennel
- 5 radishes
- 1 celery stick
- 6 cherry tomatoes
- 10 pods
- e.v.o. oil
- pepper
- salt
- Ice
Preparation:
Prepare a bowl with water and ice. Finely slice the vegetables, except for tomatoes and pods. Put the sliced vegetables in the bowl with water and let rest for at least one hour in fridge so that vegetables curl. Cut baccellone into one-centimeter slices and put in a serving dish, drizzle with olive oil and season to taste with salt and pepper. Top with the vegetables, cherry tomatoes and
pods. Serve at room temperature.
