Pecorino aged in Aleatico dell’Elba pomace

Pecorino cheese aged in valuable Elba Aleatico Passito Wine DOCG; after a first maturing period of about 70 days inside our refrigerated cells, the cheese is then moved under an abundant covering of grape marc.The refinement period can vary depending on the pomace moisture and on the vintage year. In this phase the cheese absorbs all flavors of Aleatico: cherries in syrup, plums, spicy notes of cinnamon and cloves.
