Pecorino con Tartufo Bianchetto with raw milk
Produced from raw sheep’s milk and matured for a minimum of 45 days, this pecorino is enriched with fine truffles that make its flavour very distinctive and intense. The pungent aroma of the truffle is released on the palate with every bite and provides an exceptional taste experience. The paste is soft and compact, straw-yellow in colour, speckled with the white truffle (“Tuber Borchii Vittadini”). The rind is semi-hard, the aroma is inviting and inebriating, and the flavour is surprising. We recommend this pecorino as an aperitif for delicious chopping boards and to finish off tasty appetisers. Due to its characteristic underwood notes, it gets along very well with nuts, mushroom sauces, chestnuts and onion marmalade. It is also excellent cut into thick slices on warm bruschettas or on polenta served with mushroom sauce.
