Raw Milk Pecorino Roncione

This pecorino cheese is the result of an ancient aging method: after two months inside our dairy plat, the cheese wheels are transferred to the tufaceous 1700 cave in the locality of Roncione. The peculiar microclimatic conditions, which are due to the unstable temperature and humidity of this underground environment, give this cheese unique characteristics. The processing method with raw milk emphasizes the original flavours of milk; the taste is intense, it is easy to recognize herbal and aromatic notes.
