The Busti family began its cheese-making activity in 1955: Alessandro and his son Remo Busti, shepherds originally from the upper Garfagnana, have passed on this precious tradition to Stefano and his sons.
Today, the company boasts a wide range of cheeses, mainly sheep’s milk cheeses, which are the result of experience and commitment to maintaining traditional processing techniques, with a continuous search for quality raw materials and enhancement of the territory.
With our company vehicles, we collect sheep’s milk directly from selected Tuscan farms, characterised by the quality of their pastures such as Siena, Pienza and Val D’Orcia, from which we derive our respective pecorinos with guaranteed traceability. Other areas of excellence for milk collection are the province of Grosseto, the Pisan Hills, Alta Tuscia and Bassa Maremma. The peculiar chemical-physical characteristics and the high hygienic standard of the conferring stables allow us to use this highly prized milk also for ‘raw milk’ processing.
The company is certified according to international IFS and BRC standards, demonstrating its continuous commitment to safety, quality and compliance with the regulations governing the agri-food sector at all stages of production. With the UNI EN ISO 22005:2008 standard, a Chain Traceability System has also been implemented. We are among the largest producers of Pecorino Toscano PDO and have an entirely organic product line. Attentive to the needs of lactose intolerant consumers, we have added Lactose Free certified cheeses.
